Inside Out Reeses Cake
This weekend's baking seemed to be inspired by candy... for this cake it was Reeses Peanut butter cups.
(Per usual) It all started with the chocolate mayonnaise cake cut into three layers. (Here's a cool tip: If you do not have a long knife or special cutting tool to cut straight through the cake, use floss to create a clean cut.
Here you can find the original recipe (note: I used the mayonnaise cake...the original recipe starts with a sour cream cake). I made a few modifications. For the peanut butter cream cheese frosting I used 1/3 less fat cream cheese, worked just fine. (by the way, you are saving minimum calories here.. unfortunately this does not allow you to eat half this cake in one sitting ::sigh::) I also added about 1/4 cups skim milk to the icing. I found mine to be too thick to spread and the milk made it a perfect, spreadable consistency. For the chocolate ganache I used my favorite peanut butter brand PB Loco. (Ah-mazing natural pb that comes in crazy flavors like banana pb, white chocolate raspberry pb, asian curry spice etc.) I used two tablespoons of the chocolate chip cookie dough pb to add just a hint of "secret" flavor to this cake :)
