S'o Much Mores Bars


So much more than just a s'more!




The gooey goodness of a fire roasted s'more straight from your oven. This cookie-bar is best on a night, shared with friends all gathered by the fire place with a hot chocolate in hand (the hot chocolate made with milk, of course, and served  in a smiley snowman mug - from the dollar store - ;)



Who doesn't like a s'more. C'mon, like you've never had the craving for a fire toasted marshmallow sandwiched between two graham crackers and a piece of classic Hershey's chocolate. (...just for the record - Lindt swiss chocolate works fabulously in a s'more...)  And since most of us probably don't want to stack sticks in our back yard just to roast a single marshmallow, I have the perfect alternative that's a quick, foolproof fix sure to satisfy that craving.

 

Before I found this fantastic recipe I'll share with you the way I used to enjoy a s'more inside, so even if you don't have time to try these bars right away, you can always do this:  Throw a couple of graham crackers one topped with chocolate and the other with a marshmallow into the toaster oven - set to broil until you see the marshmallow brown and the chocolate begin to melt. Voila - S'more! (Much better than in the microwave.. the graham cracker gets too mushy if you do it that way.)


Now, since I would never leave someone seeking a good s'more unsatisfied here it is....



S'o Much Mores Bars


Ingredients:
  • 1/2 cup butter, room temperature
  • 1/4 cup brown sugar
  • 1/2 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/3 cups all purpose flour
  • 3/4 cup graham cracker crumbs (Keebler makes graham cracker crumbs. You can find a box at your local grocery store. If you can't then blend about 8 graham crackers in a food processor until you get fine crumbs.)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 king-sized milk chocolate bars (e.g. Hershey’s)
  • 1 1/2 cups marshmallow creme/fluff (not melted marshmallows) (I just used an entire small jar of fluff)
Directions:
  1. Preheat oven to 350°F. Grease an 8-inch square baking pan.
  2. In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla. In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at a low speed until combined.
  3. Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough. 2 king-sized Hershey’s bars should fit perfectly side by side, but break the chocolate (if necessary) to get it to fit in a single layer no more than 1/4 inch thick. Spread chocolate with marshmallow creme or fluff. (This is tricky- fluff is sticky- dip your spatula in water before and in between spreading.)
  4. Place remaining dough in a single layer on top of the fluff (most easily achieved by flattening the dough into small shingles and laying them together)




 Since you have to press these pretty thin its a lot easier if you press out the pieces on piece of parchment paper...This way it doesn't stick to the counter and makes for an easy clean up




 5. Bake for 30 to 35 minutes, until lightly browned. Cool completely before cutting into bars.


I had a feeling this would be a good recipe and 8x8 just looked way too small so I made this recipe + half the recipe to fill a 9x11 inch brownie pan. Good thing I did. They were yummy! If you're planning on doing 1.5x the recipe then you'll have to use 2.5 eggs.. tricky but can be done.
